This wine used to see 100% American oak but we find the focus has been sharpened by a move to seasoned French oak with just 10% new American oak in the mix
and fermented for 7 – 10 days with twice daily pump overs
with vines planted in 1912
and fermented for 6-7 days in a single open top slate fermenter in the winery adjacent the vineyard
